Beer Battered Shrimp Lollipops

Batter
2 cups Flour (all purpose)
12 oz. Favorite Beer
1 Egg whole
2 oz. Cold Water
Salt and Pepper
4 dashes Malt Vinegar ( white will also work)

Mix all ingredients in a mixing bowl with a hand whisk until smooth pancake like batter.

Sweet Chili Sauce

½ cup Chipotle Peppers ( ground and strained)
1 Cup Honey
2 oz. Sesame Oil
½ cup Light Corn Syrup
2 oz. Rice Vinegar

Blend all ingredients together with a hand blender or in a kitchen blender until smooth

1 gallon of Olive/Canola Oil ( for frying)
Cast Iron Skillet or Heavy Sauce Pot
