Three Bean Salad

Here's a light and healthy recipe for your Fourth of July celebration. Three Bean Salad will be a hit at any gathering and is approved for diabetics.

Three Bean Salad

Serves 4
This recipe is from the American Diabetes Association.

Serving Size: 1/4 recipe

1/2 cup green beans, drained 
1/2 cup kidney beans, rinsed and drained
1/4 cup garbanzo beans, rinsed and drained
1/4 cup green pepper, diced
1/2 cup onions, diced
2 Tbsp Smart Balance Omega oil
1/2 cup cider vinegar
1/4 cup Splenda
Pepper, to taste

In a bowl, gently mix together the beans, pepper and onions. Pour the liquids and any other seasonings over the beans. Mix well and chill before serving.
