Almond Or Cashew Butter Apple Tahini Pita

Summer has flown by and before you know it, it's back to school time. Rather than packing your kid's lunch with the same, boring sandwich, mix it up by adding a sandwich with cashews or almonds.

Try Gala, Fuji, Pink Lady or Granny Smith apples, which go well with the nut butter. You may also want to try cinnamon raisin bread or whole wheat wraps open-faced at home and toast in a toaster oven before serving.

Ingredients:

  • 1 tablespoon cashew butter, almond butter, or sunflower seed butter
  • 1/2 whole wheat or multigrain pita pocket
  • 1/2 small apple, cored and thinly sliced
  • 1 tablespoon tahini
  • 2 teaspoons honey or maple syrup
  • 1/4 teaspoon ground cinnamon

Spread cashew or almond butter inside the pita 1/2. Arrange apple slices inside and drizzle with tahini and honey. Sprinkle with cinnamon.

This sandwich packs a nutritional punch with plenty of protein, fiber, healthy fats, complex carbohydrates, B-complex vitamins, calcium and other minerals.
