1 egg per person, beaten
Any veggies that you like that you have on hand - I like zucchini, onion, red bell pepper spinach, cauliflower, yellow squash, eggplant, etc., diced into small pieces
For variety, add some fresh diced tomato and shredded goat cheddar cheese
Put a little butter in a small skillet or omelet pan and put on medium heat. When butter is melted, add the veggies and sauté until they are crisp tender. Add beaten egg or eggs to veggies. Cook until egg is done. Serve with toasted English muffin, or serve on a whole grain tortilla with hot sauce.
This breakfast is a hit with all ages and will give everyone the fuel they need to get their day started!
