1 ½ cup grated cheese (blend of Fontina, Gruyere and Raclette) (If you can't find these cheeses, any smooth mild cheese will work well)
½ teaspoon ground black pepper
In a double boiler fondue pot, pour in wine and turn on heat. As wine is warming, add garlic. Blend. Add small quantities of grated cheese and mix thoroughly using a whipping motion once cheese is melted. Continue to add small quantities of cheese to bring to proper consistency. Add ½ tsp. of pepper and mustard. Sprinkle with nutmeg. Fold nutmeg, pepper and mustard into cheese.
