Peanut Butter Kisses And Chocolate Chip Oatmeal Cookies

Peanut Butter Kisses

1 cup natural creamy peanut butter                   1 egg
¾ cup Sun CrystalsTM                                      1 tsp. vanilla extract

Mix all ingredients together in a bowl. Stir until smooth. Roll into ¾ inch balls. Press a chocolate chip in top and then bake in a 300° oven for 15 to 20 minutes or until light brown. Bake on an ungreased baking sheet.

Chocolate Chip Oatmeal Cookies

1 cup butter, softened                                         1¾ cups Sucanat*
2½ cups oat flakes, uncooked                              2 eggs
2 tbs. milk                                                           2 tsp. vanilla extract
1 cup whole white wheat flour                                1 tsp. baking soda
¾ cup spelt flour                                                 ½ tsp. sea salt (optional)
1 cup coarsely chopped pecans or walnuts            2 cups 365 semi-sweet chocolate chips

Heat oven to 375°. Beat butter, and Sucanat until creamy. Add eggs, milk, and vanilla; beat well. Mix flour, baking soda, and salt together. Add to egg mixture. Stir in oats, chocolate chips, and nuts; mix well. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 9 to 10 minutes for a chewy cookie or 12 to 14 minutes for a crisp cookie. Cool 1 minute on baking sheet. Remove to wire rack. Cool completely.

*Sucanat is raw unrefined and unbleached cane sugar.
