- 1-pound ground turkey
- 1 medium onion, chopped
- 1 16-ounce can whole tomatoes
- 1 8-ounce can tomato sauce
- 1 15-ounce can red beans
- ½ head cabbage, chopped
- 3 carrots, sliced
- 3 ribs celery, sliced
- 3 Tablespoons uncooked rice
- 2 chicken bouillon cubes
- 2 teaspoons salt
- ¼ teaspoon freshly ground pepper
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 4 cups water
Spray soup pot with nonstick vegetable spray. Sauté turkey and onion until turkey is cooked through and onion is transparent. Add the remaining ingredients. Mix well. Cook, covered, over low heat for an hour. Can be frozen.
