INGREDIENTS:
8 oz whole grain pasta, cooked according to package directions
1 tablespoon canola oil
1/2 cup chopped sweet onion
1 pound asparagus, tough ends removed, cut in 1-inch pieces
1 cup fat-free, reduced sodium chicken or vegetable broth
4 cups fresh spinach, coarsely chopped
1/4 cup Parmesan cheese, shredded
1/4 teaspoon black pepper
2 slices cooked bacon, crumbled
1/4 cup Parmesan cheese, shredded
DIRECTIONS:
1. cook pasta according to package directions 2. heat oil in large skillet over medium heat. Add onion to pan and cook stirring occasionally, 2 minutes.
3. add asparagus and broth. Bring mixture to a boil, reduce heat and simmer 4 minutes. Remove from heat 4. add cooked, drained pasta, spinach, 1/4 cup Parmesan cheese and pepper. Toss well.
5. Transfer mixture to serving dish and sprinkle with crumbled bacon and remaining 1/4 cup Parmesan cheese.
