Broccoli Orange Salad with Poppy Seed Dressing
2 cups bite-size orange pieces
2 cups bite-size broccoli florets
4 radishes, thinly sliced
4 chopped green onions, include tops
4 cups torn romaine lettuce
¼ cups Poppy Seed Dressing
¼ cup toasted pecans
Wash produce before using. Combine the oranges, broccoli, radishes, onions and lettuce in a salad bowl. Toss to mix. You may use a commercial poppy seed dressing or make your own. Add the dressing and toss to coat.
Sprinkle with the toasted pecans before serving.
Poppy Seed Dressing
1 cup canola oil
1/3 cup cider vinegar
½ cup sugar
1 teaspoon dry mustard
¼ teaspoon salt
1 ½ tablespoons poppy seed
Combine the oil, vinegar, sugar, dry mustard, salt and poppy seeds in a jar with a tight fitting lid. Seal the jar and shake until blended. Store any unused portion in the refrigerator.
