Almond Crusted Tilapia
2 tilapia fillets
1 cup chopped almonds (or pecans if preferred)
½ cup Italian bread crumbs
2 Tbsp. olive oil
1 lemon to serve with fish
Combine almonds (or pecans) and bread crumbs in bowl. Rub fillets with olive oil. Dip fillets in crumb mixture. Bake at 400 degrees for 15 minutes. Garnish each filet with ½ lemon.
Serving for 2
Low Fat Tartar Sauce
½ cups low-fat or fat-free mayonnaise
2 Tbsp. sweet pickle relish
1 large green onion, chopped
1 ½ tsp. red wine vinegar
Mix together the mayonnaise, sweet pickle relish, green onion, and red wine vinegar. For best results, refrigerate for 1 hour before serving.
