Fancy Fish Foil Dinner


7 c. fresh spinach

4 fish filets (orange roughy, mahi mahi, sea bass, swordfish)

2 TSP. minced fresh ginger

2 TSP. minced garlic

1/2 C. white wine

1/4 C, soy sauce

2 TSP. sesame oil

4 (1 tsp.) pieces of butter

Zest of 1 lime

fresh basil leaves


Use 4 large sheets of heavy duty foil as your cooking container for your foil dinners. Preheat oven to 400 degrees. In a small bowl combine the white wine, soy sauce, sesame oil, and lime zest. Whisk together and set aside.

Place 1-1 1/2 cups of fresh spinach in the center of each of the foil pieces. Place fish on top and then sprinkle evenly with the fresh ginger and minced garlic. Pour the sauce (evenly) over the fish. Place one pat of butter on each fish filet and then seal up the foil by folding. Place on baking sheet and cook for 15-20 minutes. Remove from the oven and allow to sit for 5 minutes before opening and eating!
