Shrimp Dijonaise Penne

 Here are the items you will need: (One Serving)

2 T Olive Oil

7 Medium shrimp (head off and cleaned) (16/20 size) - cooked

2 t Minced fresh garlic

¼ c White wine

½ c Heavy cream

2 T Unsalted Butter

2 T Dijon mustard

4 oz. Penne pasta- Cooked to al dente (pre-cook with salt water and olive oil)

4 sprigs Chopped parsley

2oz. Chopped red tomato

2oz. Chopped yellow tomato

1 oz. Fresh scallions chopped or chives

Grated parmesan cheese (to taste)

Salt and Pepper to taste

Preparation Instructions:

Place sauté pan over medium heat when hot, add olive oil and garlic with shrimp. Let cook for 45 seconds, deglaze with white wine. Add butter and heavy cream, letting cream pick up the essence of the shrimp flavor and reduce the cream then add dijon and pasta. Let the sauce bind to the pasta for one minute. Shrimp should be fully cooked after five minutes, add fresh chopped tomatoes and scallions and present in a bowl with fresh grated parmesan cheese.
