Avocado and Tomato Sandwich

Ingredients

2 ripe avocados, pitted and peeled

Juice of 1/2 lime

1/4 t salt

6 T light mayonnaise

2 T chopped fresh basil

1/2 t chipotle chili pepper powder

8 thin slices Panera Bread Whole Grain Miche, light roasted

6 ounces sliced sharp cheddar cheese

2 ripe medium tomatoes, cored and thinly sliced

2 scallions (green part only), finally chopped

1 oz (1 c packed) baby arugula leaves

Directions

Using a fork, mash the avocados in a bowl. Stir in the lime juice and 1/8 teaspoon of the salt.

Stir together the mayonnaise, basil, and chipotle powder in a cup. Spread the flavored mayo evenly on one side of each slice of toasted bread. On four slices of the bread, layer the cheese, mashed avocados, and tomatoes. Sprinkle the tomatoes with the remaining 1/8 teaspoon of salt; then layer on the scallions and arugula.

Top with the remaining bread and cut the sandwiches on a diagonal. Serve immediately.
