2- 4oz. Beef Tenderloin

Cracked Black Pepper to taste

Sea Salt to taste

1 oz. Olive Oil

2 oz. White Onion finely minced

2 oz. Sliced Mushrooms

2 oz. Red Wine

2 oz. Brady or Cognac

2 oz. Heavy Cream

3 oz. Prepared Demi Glaze

2 oz. Butter

Method

Under medium Heat add Olive Oil , let temp out until hot , add Salt and Peppered Beef Tenderloin Steaks to sear in Pan, add Onion, Mushrooms , and let sweat , add Butter and deglaze with Red wine , and Cognac, add Demi, Butter and Heavy Cream let sauce reduce while cooking tenderloin in sauce.
