Mango Gluten Free Muffins
1 1/2 cups King Arthur Gluten Free All Purpose Baking Mix** (or Shawnee Mills AP Flour-see note)
1/2 cup sugar
1/4 cup vegetable oil
2 large eggs
1/2 cup mango nectar
1/2 teaspoon vanilla paste
1/3 cup unsweetened coconut
sliced almonds or pecans
Preheat oven to 350 degrees. Spray a nonstick muffin tin well with non stick cooking spray. In a bowl, combine the All Purpose baking mix, sugar, canola oil, 2 eggs, mango nectar, vanilla and coconut. Stir well. Place even amounts into muffin tin. Bake for 20-25 minutes or until a tooth pick comes out clean.
**You can sub the GF Flour for Shawnee Mills All Purpose Flour and 1/2 teaspoon baking powder.
