Blarney Stone Ice Cream Sandwiches

Ingredients:

1 Package of Sugar Cookies (I used Braum's with green sprinkles.)

1 Half Gallon Lime Sherbet

Sprinkles

Instructions:

To make the sandwiches, freeze the cookies and then remove from the freezer.

Add a scoop of lime sherbet to one cookie and then place another cookie on top to make a sandwich.

Roll the edges in sprinkles and wrap with plastic wrap.

Return to freezer to firm up! Serve!
