Sweet and Savory Stuffed Pork Tenderloin
1 pork tenderloin, butterflied and flattened
2 1/2 cups seasoned bread stuffing
1/2 onion, chopped
2 celery ribs, chopped
1 apple, chopped into strips
1 cup hot water or chicken broth
1/4 cup chopped pecans
1 1/2 tsp. rubbed sage
1 tsp. minced garlic
1 tsp. thyme leaves
1/2 tsp. allspice
1/2 tsp. paprika
salt and pepper
In a skillet sauté together the onion, celery and apples till tender. In a large bowl combine the bread stuffing, hot water and the sautéed vegetable mixture. Add in all of the spices and stir till combined. Salt and pepper the pork tenderloin. Then place the stuffing down the center of the pork tenderloin and then roll. Use butcher twine to tie closed. Then sear the pork tenderloin in an oven proof skillet on all sides. Then place in a 375 degree oven to finish cooking for 30 minutes. Remove from the oven and allow to cool for 15 minutes before slicing.
