Caprese Grilled Cheese

Ingredients:

6 slices sourdough or Ciabatta bread

4 Roma tomatoes, sliced

2-3 tbsp balsamic vinegar

olive oil

2 large garlic cloves

8 oz. fresh mozzarella, sliced

2 large handfuls basil leaves (about 1 oz)

salt and pepper to taste

Directions:

1. Place the sliced tomatoes on a flat pan greased with olive oil. Drizzle the tops with a little olive oil, salt and pepper, and balsamic vinegar.

2. On the broil setting, bake the tomatoes in the oven for about 12-15 minutes, checking occasionally to make sure the tomatoes aren’t sticking.

3. Mix the minced garlic with olive oil and brush oil on the outside of each slice of bread. Layer the plain side of bread with few basil leaves, roasted tomatoes, mozzarella cheese, and add more basil to top with other slice of bread.4. Place on grill and flip sandwiches once, until golden brown and cheese is melted, approximately 6 minutes.
