Refrigerator Pickles And Veggies

Ingredients:

1 small sweet onion, thinly sliced

2 pounds medium sized pickling cucumbers or use any combination of veggies like peppers, beets, zucchini, cauliflower, carrots, green beans, asparagus, garlic, okra, and onions.

1 1/2 cups of apple cider vinegar

1 cup water

1 cup sugar

2 tbsp salt

2 tbsp spice market pickling spice

2 tsp dill seeds [optional]

Directions:

Divide sliced onion between two 1 quart wide mouth glass jars.  Pack cucumber slices horizontally in jars. 

Using a mortar and pestle crush pickling spices and dill seeds.

Place crushed spices in medium saucepan

Add vinegar, water, sugar and salt

Bring mixture to boil over medium heat, stirring in sugar until dissolved.

Pour mixture evenly over cucumbers.

Cool 5-10 minutes.

Place lids over jars and close tightly. 

Refrigerate.

Flavors are at peak in 8 hours and last up to one month.

Makes 2 one-quart jars of pickled veggies.
