1 each corn on the cob
1/2 cup mayonnaise
1/2 tablespoon of your favorite hot sauce
1 tablespoon Queso Fresca
pinch of either chili powder or paprika salt and pepper to taste
optional- skewers or cob handles
Combine mayonnaise and hot sauce in a small bowl and reserve for later.
Crumble queso fresca and set it aside.
Shuck corn and season with salt and pepper place corn on the grill at a low heat setting. You are looking for char, but not until corn is fully cooked and tender.
Brush on hot sauce and mayonnaise mixture evenly onto the corn.
Sprinkle queso fresco first, then chili powder or paprika, and garnish with fresh picked cilantro or chives.
