Caribbean Chicken With Tomato Relish

Farmers' Market Tomato Relish

Ingredients:

3 cups fresh, ripe tomatoes, chopped

1/2 cup green onions, chopped

1/2 cup colorful bell peppers, chopped

1/2 cup good quality olive oil

1 cup white vinegar

1/2 cup fresh basil, chopped

Salt & pepper, to taste

Directions:

Combine all ingredients and place in a covered bowl in the refrigerator overnight to maximize flavors. Serve over Chef JV's Caribbean Chicken.

Caribbean Chicken

Ingredients:

2 cups rice

2 1/2 bell peppers

3 limes

1bloodd orange

2 medium yellow or white onions

3/4 serrano or ancho pepper

2 1/2 pounds Boneless, skinless chicken breasts

3 tablespoons good quality olive oil

1 cup orange juice

3/4 cup water

1/2 cup fresh thyme

1/4 teaspoon ground pepper

1/2 teaspoon salt

Directions:

Steam or cook rice while you prep the veggies and chicken.

Dice onions & bell peppers. Juice the limes and orange.

Cut chicken into 1 inch cubes.

Heat oil in a large skillet to high and add chicken. Lower to medium heat and cooked until well browned, approximately 25 minutes.

Add in the peppers and onion, cooking another 5 minutes.

Add in salt, pepper, herbs, water and citrus juice, bringing to a boil, then reducing heat to low.

Continue simmering until the sauce thickens, approximately 15 - minutes.

Plate the chicken over cooked rice along with the Farmers' Market Tomato Relish to serve - Enjoy!
