Ingredients:
1 ½ cups buttermilk
1 cup pumpkin puree (canned pumpkin)
1 egg
2 tablespoons vegetable oil
2 cups all-purpose flour
¼ cup brown sugar
2 teaspoon baking powder
1 teaspoon baking soda
3 teaspoons pumpkin pie spice
½ teaspoon salt
Optional Topping: Cooked sliced apples, applesauce, and walnuts
Directions:
1. In a bowl, blend together the buttermilk, pumpkin, egg, and oil.
2. In a separate bowl, blend together the flour, brown sugar, baking soda, baking powder, pumpkin pie spice and salt.
3. Stir the pumpkin mixture into the dry ingredients until slightly blended. Do not over-stir.
4. Heat a lightly oiled griddle of frying pan over medium heat. Use a ¼ size measuring cup to scoop the batter onto the hot surface. When the pancake surface begins to have “holes” appear, turn with a spatula.
5. Top with cooked apples or applesauce and walnuts if desired.
