No-Bake Energy Bites

1 Cup rolled oats
1 Cup coconut flakes
½ Cup ground flax seeds
½ Cup mini chocolate chips
½ Cup sunflower butter, crunchy (or other nut butter)
1/3 Cup honey
1 teaspoon vanilla

In a large bowl mix all the ingredients until thoroughly incorporated.  Let chill in the refrigerator for 30 min.  With a small ice cream scoop or tablespoon, scoop out mixture and roll into balls.  Store in an airtight container and refrigerate for up to 1 week. Makes about 40 balls.
