Andolini's Chicken Barbecue Pizza

This recipe features barbecue sauce made with jalapeños and Granny Smith apples, smoked, cubed chicken, deep-fried shoestring onions, and smoked mozzarella.

Heat your oven, with a pizza stone on the middle rack, to 500 degrees. Let the stone warm with the oven, and try to allow time for the stone to heat thoroughly

Prepare your dough & stretch, toss or work into shape

Heat oil in a deep fryer or a deep skillet

“Shoestring” white onion, bread lightly and deep fry; set aside

Use your favorite BBQ sauce sparingly in place of marinara on the pizza dough

Add shredded smoked mozzarella

Buy or prepare some cooked, smoked chicken by cubing into 1/2” pieces, scatter on pizza on top of cheese

Scatter the shoestring onions on top of the cheese and chicken

Top lightly with a few extra dabs of barbecue sauce and bake until crust and cheese are golden brown!
