Bacon Pancakes With Berry Infused Syrup

1 cup 365 Everyday Value® Pancake Mix
2/3 cup Milk
1 Tbs Oil
1 Large Egg
1 cup Chopped Bacon (cooked)
1 cup Seasonal Berries
¾ cup Maple Syrup
¼ cup Unsalted Butter

In a small sauce pot, combine syrup and berries. Lightly mash berries with the back of a spoon. Then, cook on medium heat for 20 minutes, stirring occasionally.

In a medium size bowl, mix together pancake mix, milk, oil, and egg to make a batter. Heat a non-stick skillet over medium-high heat and add one heaping tablespoon of bacon and 1 tsp of butter.

When the bacon begins to sizzle, add a scoop of pancake batter. Cook the pancake until bubbles begin to form on top and the bottom starts to brown. Flip the cake and continue cooking about 2 minutes. Stack pancakes on a plate and top with berry infused syrup!
