Irish Shepherd’s Pie

<p>Chef Tony Aidoo from the Hard Rock Hotel and Casino showed how to make an Irish Shepherd's Pie, just in time for St. Patrick's Day.</p>

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup diced yellow onions
  • 4 lbs. lean ground lamb
  • 1 cup all-purpose flour
  • 3 pinches of cinnamon
  • 1 Tbsp. minced fresh rosemary
  • 1 Tbsp. minced garlic
  • 1 Tbsp. ketchup
  • 4 cups of beef or chicken broth
  • 2 cups peas
  • 2 cups diced carrots

Directions

  1. Place olive oil in a hot pot.
  2. Add meat and brown, and then add flour to absorb all the oil and form a roux.
  3. Add all the seasonings, peas, carrots and broth to the pot, continually stirring as you add the broth.
  4. Let simmer for 5 minutes.
  5. Transfer to a casserole dish and bake 15 minutes.
