• 4 large potato’s                    
  • 1 tablespoon Joe’s All Purpose BBQ Seasoning
  • 1 lb. Chopped Brisket or Pulled Pork         
  • 1 stick soft salted butter
  • 1 cup sour cream                          
  • Salt and fresh black pepper to taste
  • 1 cup Colby Jack cheese grated                
  • 1 cup finely chopped chives
  • 1 Bottle of Joe’s Original BBQ Sauce  


  1. Bake the potatoes in the smoker or wrapped in foil in oven at 325 degrees for 2½ hours
  2. Remove from heat and let stand for 15 minutes
  3. Slice potatoes in half lengthwise 
  4. Place a few patties of soft butter and a dollop or two of sour cream on potato
  5. Spread ¼ lb of Chopped Brisket or Pulled Pork over top of Potato
  6. Sprinkle cheese over potato 
  7. Sprinkle chives over potato
  8. Drizzle BBQ Sauce over potato and serve.
