Ingredients:

  • 1 pound angel hair pasta, cooked, cooled & drained completely
  • ¼ cup Fresh Basil Pesto
  • ¼ cup Olive Oil
  • 1 tabl. Fresh Garlic, minced
  • ½ cup  Fresh Grated Parmesan
  • Salt & Pepper to taste

Salad

  • 1 pt. Cherry Tomatoes, halved
  • 1 tabl. Fresh Pesto
  • 2 tabl. Balsamic Vinegar
  • 2 cups Baby Greens or Arugula
  • Fresh Grated Parmesan
  • Salt & Pepper to taste

Instructions

  1. Warm non-stick skillet over medium heat; toss all ingredients together and form into nests. 
  2. Coat skillet with additional olive oil, drop nests in medium size piles and press lightly; lightly sauté until golden brown on each side
  3. Place nests on presentation plate and top with cherry tomato salad and garnish with additional grated Parmesan.
