Mike Bausch of Andolini's Pizzeria joins us in the Cooking Corner with a great recipe for Andolini's Signature Salad.

Ingredients:

3 cups field greens per salad

2 to 3 Tablespoons of candied walnuts per salad

2 to 3 Tablespoons of sliced almonds per salad

2 large strawberries, sliced, per salad

2 oz mango vinaigrette or other light, bright dressing per salad

1 Tablespoon of shredded Parmesan per salad

1 cup sugar per every 2 cups of walnuts

How to candy walnuts:

Halve your walnuts (or buy them already cut into halves). How many you need depends on how much crunch you want in your salad and how many you’re making, but assume a small handful per salad serving. Melt 1 cup of sugar over medium heat per 2 cups of nuts until it caramelizes, then remove from heat. Add nuts and mix thoroughly. Allow to cool, and break apart if necessary. 

Assemble the salad:

While the walnuts are cooling, toss field greens in a mango vinaigrette – the sweet/tangy combination sets off the whole salad.

Add the candied nuts and toss lightly to mix. 

Top with sliced almonds, shredded parmesan and sliced fresh strawberries.

Serve immediately.
