Montereau Executive Chef Joseph Fistrovich show us how to make a Citrus marinade salmon.
Night before combine zest, sugar, and salt in small mixing bowl. Place on top of salmon pressing onto flesh. Refrigerate overnight. Next day rinse marinade off salmon under cold water.
In a small sauté pan over medium heat, add canola oil to pan. Place presentation side salmon into pan and sear for 2 minutes or until golden brown. Flip and cook another 2 minutes. Cook until desired temperature.
In small sauce pot combine orange juice and mustards mix and bring to a boil. Serve with salmon and Enjoy!
