(1) 5-7 pound Leg of Lamb 3 Cups Apple Juice 1 Cup Cranberry Juice ¼ Cup Fresh Thyme Leaves ¼ Cup Fresh Rosemary Leaves 1 Medium Onion (Julienne) 1 Tablespoon Fresh Garlic ½ Tablespoon Salt 1 Tablespoon Course Black Pepper
Puncture lamb leg in numerous places with fork. Place leg of lamb in pan with all ingredients and marinate in refrigerator for two to three days prior to cooking. Set oven at 400 degrees.
Remove lamb from marinade and place into baking dish. Roast for 20 minutes. Reduce heat to 200 degrees and roast until internal temperature has reached 155 degrees (this will take approximately 1 ½ to 2 hours). Remove from oven and serve.
