1 box (16 oz.) one-step angel food cake mix½ C. water 5 T. cocoa powder 1/8 tsp. coconut extract 1/8 tsp. almond extract 1 C. sweetened flaked coconut
Preheat oven to 350 degrees F. In a large mixing bowl, beat cake mix on low speed 30 seconds, then medium speed one minute. Blend in cocoa powder and extracts. Fold in coconut. Drop by level tablespoonfuls onto a parchment lined baking sheet. Flatten slightly with a spoon. Bake 12 minutes or until set. Remove paper with cookies to a wire rack. Cool completely. Carefully peel cookies from paper. Store in an airtight container.
