10 servings
1 can (20 oz.) unsweetened sliced apples, drained
1/4 C. sweetened dried cranberries, coarsely chopped
1/4 C. golden raisins, coarsely chopped
1/3 C. + 3 T. sugar, divided use
2 1/4 tsp. cinnamon, divided use
1/2 tsp. maple flavoring
1/4 tsp. butter flavoring
10 flour tortillas (98% fat-free, 6 inches each)
Butter-flavored cooking spray
Preheat oven to 400 degrees F. Place drained apple slices in blender. Process until apples are consistency of a very chunky applesauce. Transfer to a medium mixing bowl. Add sweetened dried cranberries, raisins, 1/3 cup sugar, 1 1/2 teaspoons cinnamon, maple flavoring and butter flavoring. Blend well. Set aside. In a small bowl, combine 3 tablespoons sugar and 3/4 teaspoon cinnamon. Set aside. Place 5 tortillas in a plastic bag. Do not seal. Heat in microwave 30 seconds. Carefully remove warm tortillas from bag one at a time. Spray one side of tortilla with butter-flavored cooking spray. Sprinkle with cinnamon and sugar mixture. Turn tortilla over and spread a scant 1/2 cup filling mixture down the center of tortilla. Roll up and place on a cookie sheet sprayed with butter-flavored cooking spray. Repeat steps 5 & 6 with remaining tortillas. Spray rolled tortillas lightly again with butter-flavored cooking spray. Sprinkle with remaining cinnamon and sugar mixture. Bake 10 minutes or until golden brown.
