Yield:
8 servings, ¾ cup each
Ingredients:
¾ cup wine vinegar
¼ cup water
1 tablespoon canola oil
¼ teaspoon salt
½ teaspoon black pepper
1 tablespoon sugar
¼ teaspoon ground mustard
½ teaspoon garlic powder
2 cucumbers, diced
2 tomatoes, diced
1 red or orange pepper, diced
1 green pepper, diced
1 red onion, diced
Directions:
1. In a small mixing bowl combine the first eight ingredients (vinegar through garlic powder, set aside.
2. In a large mixing bowl combine cucumber, tomato, peppers and onion.
3. Pour dressing over salad mixture and toss.
