1 medium potato, cleanedButter-flavored mist 4 tsp grated cheese blend of parmesan, romano and asiago, divided use Olive oil cooking spray 1 cup broccoli florets 3 white mushrooms, sliced 1/4 tsp lemon pepper 3 oz. pre-cooked shrimp (app. 14 medium)
1) Make 3/4-inch crosswise slices in potato approximately 1/2-inch apart. Cook in microwave on high setting until done, app. 10-15 minutes. 2) Lightly spray cooked potato with butter mist. Sprinkle with 2 tsp. cheese blend. Set aside. 3) Spray a medium saucepan with olive oil cooking spray. Heat over medium heat. Saute broccoli and mushrooms until tender, 1-2 minutes. Add lemon pepper and shrimp. Saut`an additional 1-2 minutes. 4) Pour shrimp mixture over potato. Garnish with remaining cheese. Add more lemon pepper to taste.
