3 loaves
Vegetable oil cooking spray2 cups mashed ripe bananas (4-5 medium)
1/2 cup fat free sour cream
1/2 cup unsweetened applesauce
2 cups sugar
1 cup egg substitute
1/2 cup fat free milk
2 tablespoons grated orange peel
2 teaspoons vanilla
2 teaspoons coconut extract
2 teaspoons almond extract
1/2 cup flaked coconut
1 can (8 ounces) crushed pineapple, drained
4 1/2 cups self-rising flour
2 teaspoons baking soda
3 tablespoons chopped pecans
Prehet oven to 350 degrees. Spray 3 9-x-5-inch loaf pans with cooking spray. In a large bowl combine bananas, sour cream,applesauce,sugar, egg substitute, milk, orange peel, vanilla, coconut extract, almond extract coconut and pineapple.
In a separate bowl, combine flour and baking soda. Stir the dry ingredients into the wet ingredients until combined. Pour into pans. Sprinkle with pecans.
Bake 35-40 minutes or until tester comes out clean.
