Herb-Crusted Boneless Ham

Yield:
10-12 servings
Ingredients:
5 lb. boneless ham
2 tbsp dijon style mustard
1/4 tsp freshly ground black pepper
1/2 tsp dried rosemary
1 1/2 cups dry bread crumbs
1/2 cup fresh parsley chopped
1 tbsp extra-virgin olive oil
1/2 tsp orange zest
1 tbsp orange juice
1 garlic clove, minced
Directions:
Preheat oven to 325 degrees. In a bowl, combine mustard, pepper and rosemary and rub over surface of ham. Mix bread crumbs and parsley together. Whisk olive oil, orange zest, orange juice and garlic together. Combine with bread crumb mixture. Press crumbs onto mustard coated ham. Place in roasting pan and bake for one hour.
Yield: 10 - 12 servings.
