Yield:
Ingredients:
1 (2.4 oz) box Zatarain's Red Bean Seasoning Mix *1 pound dry red beans
3 cup white rice, uncooked
1 (14 oz.) package Healthy Choice Low-fat Smoked Sausage, diced
Directions:
1. Soak beans over night.
2. Combine beans and 7 cups of water in a 4-quart saucepan.
3. Bring to a rolling boil.
4. Reduce heat to low, cover and cook for approximately
45 minutes.
5. Mix Zatarain's Seasoning Mix and 1 cup cold water
together in a separate bowl.
6. Add seasoning mixture to beans stirring constantly.
7. Cut sausage into bite-size pieces and add to beans.
8. Return to a boil; reduce heat to low and cook for 2-3 hours.
9. Cook rice according to package directions.
10. Serve beans over the rice. Yields 9 (1 cup) servings.
