2 Yukon gold potatoes, (10 ounces), quartered 1/4 cup fat-free cottage cheese 1/4 cup green onion, chopped 1/8 teaspoon white pepper 1/8 teaspoon minced garlic 2 tablespoons garlic herb flavored Parmesan cheese topping 1 tablespoon bacon bits (1.5g fat per tablespoon) 1/8 teaspoon salt (optional)
1. Cover potatoes with water in a medium saucepan. Bring to a boil. Cook 12-15 minutes or until fork tender. Drain. 2. In a medium mixing bowl, combine potatoes and remaining ingredients. Beat until smooth.
