1 pkg. Pillsbury refrigerated pie crust 2 C. raisins 2 C. water 1/2 C. sugar 2 T. flour 3 T. fresh squeezed lemon juice 1 tsp. vanilla
Bring water to boil in a medium saucepan. When water boils add the raisins and lower heat. Cover and simmer the raisins about 5 minutes or until they are plump and tender. In a small bowl mix together the sugar and flour. Quickly mix the flour and sugar mixture into the raisins and bring to a boil over medium heat. Boil 1 minute. Remove from heat and add lemon juice and vanilla. Allow filling to cool while preparing pie crust according to package directions. Bake @ 350 degrees F. for 45 minutes until crust is golden.
