Smoked Salmon Cheesecake

Smoked Salmon Cheescake

Appetizer-Side Dish 
3/4 lb. Smoked salmon, chopped
1 large onion, finely chopped
1 tbsp. Fresh dill
2 tbsp. Butter
1 1/2 lbs. Cream cheese, softened
8 eggs
1/2 cup half & half
1/2 cup gruyere cheese, grated
1 (8 inch) springform pan, buttered and floured
garnishes: sour cream, capers, pearl onions, your favorite
pickles and olives, and/or pickled corn
preheat oven to 300 degrees. Soften cream cheese slightly and then combine with eggs and salmon in a food processor and mix well. Saute onion and dill in butter. Add onion mixture along with half and half and cheese. Blend until smooth. Pour entire mixture into springform pan and bake for 45 to 60 minutes or until firm and nicely browned on top. Serve each slice with a dollop of sour cream, capers etc. And your favorite crackers
