Spiced Holiday Nuts

32 oz (8 c) walnuts or pecans
2 egg whites

spicy toppings:
3/4 c sugar
1/2 tsp cayenne
1/2 tsp cumin

sweet toppings:
1/2 c sugar
1/2 Tbsp nutmeg
1/2 Tbsp cinnamon
1/2 Tbsp ground ginger
Whisk egg whites in mixing bowl. Add nuts and stir to coat well. Combine spicy or sweet ingredients, sprinkle over nuts. Spread nuts evenly on large sheet pans. Bake in 350 degree over for 5-7 minutes. Be careful as they can BURN very quickly.
