Stuffed French Toast

1 apple, peeled, cored and sliced1 pear, peeled, cored and sliced
1 tablespoon and 1 teaspoon butter
2 tablespoons sugar
1 teaspoon cinnamon
2 eggs
1 egg white
1/2 cup skim milk
pinch of salt
4 slices Texas toast
In a skillet, saute the apple and pear in 1 teaspoon of butter, until soft (about 10 minutes).
Add the sugar and cinnamon and continue to cook another minute.
Set aside.
In shallow dish mix 2 eggs and 1 egg white, the skim milk and salt. Place 2 pieces of bread in the egg mixture and place it wet side down on a cutting board. Spoon in some of the apple/pear mixture onto the bread. Dip the other 2 slices of the bread into the egg mixture and then place on top of the sliced covered with fruit (egg side out).
Saute the bread with the apples and the pears on a griddle
Saute the bread with teh apples and pears on a griddle or in a skillet with remaining butter. Brown each side,and serve with warm maple syrup and other fruit if desired.
