4 bell peppers1 tomato (diced) 1 C. shredded part-skim mozzarella cheese 1-4 pack of veggie burgers (thawed) Fresh chopped basil (optional) 1/8 tsp. salt 1/4 tsp. pepper
Cut off stem ends of peppers and remove seeds. Bring 4 quarts of water to boil, then place peppers in. Parboil peppers for 5 minutes until they can be pierced with a fork. Remove from water and let cool.
While peppers are boiling, crumble veggie burgers into mixing bowl then add diced tomato, mozzarella cheese, basil, salt and pepper. Mix well, then proceed to stuff all 4 peppers with an even amount of mixture.
Place stuffed peppers in microwave and cook on high for approximately 4 minutes with turning once during cooking. Serve hot. If desired, add a few tablespoons of tomato sauce over peppers.
