Stuffed Mushrooms

Caribbean/Appetizers-Side Dish
15 servings
15 medium-size white mushrooms1/4 cup shredded mozzarella cheese
1/4 cup grated cheese blend of Parmesan, Romano and asiago
2 tablespoons minced fresh parsley
3 tablespoons fat-free sour cream
1 green onion, diced
1/2 teaspoon dried Italian seasoning
1 teaspoon minced garlic
1/8 teaspoon ground black pepper
1/2 teaspoon Caribbean jerk seasoning
1. Preheat oven to 350 degrees. Clean mushrooms with damp paper towels. Remove finely chop mushroom stems.
2. Ina medium mixing bowl, combine chopped mushroom stems and remaining ingredients. Spoon evenly into mushroom caps and place in a shallow baking dish. Bake 15 to 20 minutes or until cheese melts. Or, cook uncovered in microwave on high setting 3 to 4 minutes or until cheese melts, rotating a quarter-turn every minute.
