Ingredients:
1 teaspoon olive oil1/2 cup yellow (or red) onion, chopped
1/2 cup green pepper, chopped
1 cup cooked ham, diced
1/2 teaspoon chili powder
4 (Soft Taco Size) flour tortillas
1 cup Mexican Style Shredded Cheese
Directions:
In a large skillet, heat oil over medium heat. Add chopped onion, green pepper and ham. Sprinkle with chili powder. Cook, stirring frequently, until vegetables are softened, about 5 minutes. Using a slotted spoon, transfer cooked mixture to a bowl; reserve.

Place one flour tortilla in same skillet, using remaining oil. Sprinkle with 1/4 cup of shredded cheese. Place half of the reserved vegetable mixture on top, then sprinkle with another 1/4 cup of shredded cheese. Top with another tortilla, and let cook for 3 to 5 minutes, or until bottom tortilla is crispy and slightly browned. Carefully flip the quesadilla over, and cook for an additional 3 to 5 minutes, or until cheese is melted.

Remove quesadilla from skillet, and cover to keep warm. Repeat process with remaining ingredients. Slice quesadillas into quarters, using a sharp knife, or a pizza cutter. Serve with salsa, guacamole, or sour cream. Enjoy!
