Low-fat Chicken Parmesan

Serves 2
2 chicken breasts
1/3 c bread crumbs (Progresso Italian works well)
1/4 c fat-free parmesan cheese
1 T basil
1 tsp garlic salt
1 tsp parsley
1/2 tsp oregano
1/4 tsp thyme
1/8 c lowfat butter
2 tsp olive oil
1/4 c white cooking wine
Preheat oven to 350 degrees. Mix cheese, bread crumbs, and spices. Trim fat from chicken, coat with mix. Pour water in baking pan (use cooking spray too). Put chicken in pan. Melt butter and add olive oil, pour on chicken and bake for 30 minutes at 350 degrees. Pour wine over chicken, cover with foil, and bake for 15 minutes at 325 degrees. Remove foil, turn oven up to 350, bake ten more minutes. Goes great with pasta... you can add olive oil, parmesan, basil, and garlic to it, or serve with tomato sauce.
