1 ½ C. uncooked rigatoni pasta noodlesOlive oil cooking spray 4 oz. 98% fat-free smoked sausage, sliced diagonally into bite-size pieces ½ C. green bell pepper, cut into 1-inch pieces ½ C. red bell pepper, cut into 1-inch pieces 1 ½ C. low-fat roasted garlic and onion spaghetti sauce 1/8 tsp. ground red pepper 2 T. fat-free grated Parmesan topping
Cook pasta according to package directions with no added fat or salt. Spray a large skillet with olive oil cooking spray. Cook sausage over medium heat for 2 minutes, stirring occasionally. Add peppers and cook for an additional 3-5 minutes or until peppers are tender. Stir in spaghetti sauce and red pepper. Cook until heated. Serve sausage mixture over pasta; garnish with cheese.
