Ingredients:
Small Salad:

2 oz. spinach leaves
1 hard-boiled egg, diced
2 oz. artichoke hearts, diced
1 1/2 oz. sun-dried tomatoes, diced
1 1/2 oz. Feta cheese
1 1/2 oz. bacon bits
2 oz. balsamic dressing
1/3 C. croutons
2 tsp Feta cheese
2 tsp. pine nuts

Large salad:

4 oz. spinach leaves
1 hard-boiled egg, diced
4 oz. artichoke hearts, diced
2 oz. sun-dried tomatoes, diced
2 oz. Feta cheese
2 oz. bacon bits
4 oz. balsamic dressing
1/2 C. croutons
1 T. Feta cheese
1 T. pine nuts

Directions:
Toss the first 7 ingredients together in a mixing bowl. Pour into serving bow. Be sure to scrap any "goodies" left in the bowl on top of the salad. Sprinkle croutons, additional feta, and pine nuts on top of the salad.
