Chicken Fajitas With Mango Salsa

Six in the Morning did some cooking in the kitchen with Rachel Vincent from St. John Hospital in Owasso.  The recipe is Chicken Fajitas with Mango Salsa.

Ingredients: 

1 ½ pounds raw chicken breast, sliced into 1-inch strips

1 teaspoon ground cumin

1 cup pineapple juice

2 tomatoes, chopped

1 mango, peeled and chopped

¼ cup cilantro, finely chopped

½ roasted red pepper, chopped

5 green onions, chopped

1 jalapeño, seeded and chopped

2 tablespoons lime juice

¼ teaspoon salt

¼ teaspoon pepper

¼ teaspoon garlic powder

Nonstick cooking spray

8 96% fat-free fajita size tortillas

Garnish

Fat-free sour cream, optional

Reduced-fat cheese, optional

Directions: 

  • 1. Sprinkle chicken with cumin. Pour pineapple juice over meat and let marinate while you prepare the salsa.
  • 2. Combine next 10 ingredients (tomatoes through garlic powder) in a medium nonmetallic bowl and set aside.
  • 3. In a skillet, sprayed with nonstick cooking spray or on a grill cook meat and vegetables over medium heat, stirring often to make sure meat does not stick. Cook approximately 7-10 minutes or until meat is no longer pink and vegetables are crisp tender.
  • 4. Spoon meat and salsa mixture evenly into each tortilla.

Yield:   4 servings, 2 fajitas each
